If a virus has gone out roaming the net within the day, supposedly a computer gets infected and you have an updated Anti Virus software, will the software recognize the new virus within a day, or a week in advance or later?

Most AV programs depend on 'definitions' to find and remove 'viruses' and how quickly new definitions are available depends on how serious the new 'virus' is in terms of what it can do and how quickly it's spreading. So, a new virus that is spreading quickly and does serious damage would normally get priority over a new virus that's spreading slowly and isn't that harmful. However, it depends how hard it is to find a 'cure'.
Kaspersky are famous for issuing updates every hour but that doesn't mean that a definition for a new 'virus' will be issued within an hour of the 'virus' hitting the streets.
Some AV programs uses heuristics as well as definitions, these can be more effective in stopping infections.
Some types of infections can't be removed with an anti-virus or anti-spyware program, you need to use more powerful, specialist tools. Best to use these under guidance from an expert at a specialist malware-removal forum, e.g. Spyware Warrior, Bleeping Computer, etc.
